Serves 4
100g plain flour
250ml milk
Pinch of salt
1 egg
10g melted butter
Vegetable oil for greasing the pancake pan

Sieve the flour and salt into a bowl.
Add the egg & milk then whisk to a smooth batter.
Mix in the melted butter.
Heat a drop of oil in the pan until smoking.
Pour enough mixture into the pan to just cover the surface.
Cook for a few seconds until brown then flip & cook the other side.
